This book discusses the hygienic and sanitary conditions of fast food cafeterias, a segment that has been growing significantly due to changes in eating habits and increased consumption of meals outside the home. Despite the significant participation of this sector in the food market, there are still few studies that systematically analyze aspects related to food safety in these establishments. The book was drawn up from a literature review based on scientific articles published between 2002 and 2022, consulted in the Lilacs, Scielo and Google Scholar databases, in Portuguese and English. The text covers fundamental concepts of good practice, quality management and health legislation applied to food services, seeking to provide theoretical support for professionals, researchers and students in the field. The publication aims to contribute to the debate on the importance of hygienic and sanitary control and to the continuous improvement of quality in the production of meals.
