Os arabinoxilanos são componentes importantes do trigo que não só têm um certo valor nutracêutico, como também possuem propriedades que influenciam o processamento e a cozedura de produtos à base de trigo. O trabalho apresentado neste livro relaciona-se com os níveis das fracções de arabinoxilano em cultivares de trigo duro do Paquistão. A informação será útil para a indústria do trigo no desenvolvimento de produtos funcionais e também ajuda os programas de melhoramento do trigo no desenvolvimento de cultivares enriquecidas com arabinoxilanos.
