Food is fundamental to human survival, health, economic development and social stability. Yet the ability of societies to produce sufficient, nutritious and affordable food is increasingly challenged by climate change, land degradation, water scarcity, biodiversity loss, population growth, changing consumption patterns and economic instability. The relationship between harvesting, environmental sustainability and food security has therefore become one of the most important issues of the twenty-first century.Harvesting is more than the final operation of collecting a crop. Unsustainable harvesting practices can contribute to soil degradation, resource depletion, post-harvest losses and environmental pollution. Conversely, sustainable harvesting can improve resource efficiency, protect ecosystems, strengthen rural livelihoods and contribute to long-term food security.
