Polyzyklische aromatische Kohlenwasserstoffe (PAK) sind chemische Verbindungen, die zwei oder mehr kondensierte Benzolringe in linearer, winkliger oder clusterförmiger Anordnung enthalten und ausschließlich aus Kohlenstoff und Wasserstoff bestehen. Polyzyklische aromatische Kohlenstoffe (PAC) umfassen die unsubstituierten Kohlenwasserstoffe (PAK) und substituierten polyzyklischen aromatischen Kohlenwasserstoffe (z. B. Nitro-PAK, sauerstoffhaltige PAK). PAK sind die stabilste Form von Kohlenwasserstoffen mit einem niedrigen Wasserstoff-Kohlenstoff-Verhältnis und kommen in der Regel eher in komplexen Gemischen als in einzelnen Verbindungen vor. Polyzyklische aromatische Kohlenwasserstoffe entstehen größtenteils durch Garen bei hohen Temperaturen, wie z. B. Grillen, Braten und Frittieren. Geräucherte und gegrillte Lebensmittel sind besonders wichtige Expositionsquellen, obwohl der größte Beitrag zur täglichen PAH-Aufnahme von Ölen und Fetten stammt. PAHs werden aufgrund von städtischen Abflüssen und industriellen Aktivitäten häufig in Oberflächengewässern nachgewiesen.
