Os hidrocarbonetos aromáticos policíclicos (PAHs) são compostos químicos que contêm dois ou mais anéis de benzeno fundidos em arranjo linear, angular ou em cluster, contendo apenas carbono e hidrogénio. Os hidrocarbonetos policíclicos aromáticos (PACs) incluem os hidrocarbonetos não substituídos (PAHs) e os hidrocarbonetos policíclicos aromáticos substituídos (por exemplo, nitro-PAH, PAH oxigenados). Os PAHs são a forma mais estável de hidrocarbonetos com baixa relação hidrogénio-carbono e geralmente ocorrem em misturas complexas, em vez de compostos únicos. Os hidrocarbonetos aromáticos policíclicos são formados principalmente devido ao cozimento em altas temperaturas, como grelhar, assar e fritar. Alimentos defumados e grelhados são fontes particularmente importantes de exposição, embora a maior contribuição para a ingestão diária de PAHs venha de óleos e gorduras. Os PAHs são comumente detectados em águas superficiais, devido ao escoamento urbano e às atividades industriais.
