Este livro representa um relatório de um produto de investigação financiado pelo Ministério do Ensino Superior e Investigação Científica do Sudão no ano de 2010. A investigação consistiu na avaliação dos métodos predominantes de conservação e processamento de peixe na região de El Dueim, no centro do Sudão. As análises incluíram a determinação das características químicas e microbiológicas, bem como a avaliação sensorial de produtos tradicionais de peixe selecionados.
