Napromieniowanie jest istotnym sposobem sterylizacji żywności z mikroorganizmów. Niniejsze badanie ma na celu określenie obciążenia mikrobiologicznego ekologicznego mięsa drobiowego oraz jego eliminacji za pomocą promieniowania gamma, a także wydłużenie okresu przydatności ekologicznego mięsa drobiowego i optymalizację dawki promieniowania, która może zostać ustalona jako standard sterylizacji ekologicznego mięsa drobiowego w Pakistanie. Mikroorganizmy eliminowane przez napromieniowanie to Campylobacter jejuni, Escherichia coli, Staphylococcus aureus, Salmonella spp. i Aeromonas hydrophila. Ponadto zabieg ten zmniejsza również obciążenie mikroorganizmami odpornymi na kwasy i antybiotyki, nie powodując żadnych zmian w wartościach odżywczych, sensorycznych i technicznych mięsa.
