Oprócz znaczenia gospodarczego drzewo oliwne ma dla mieszkańców regionu śródziemnomorskiego dużą wartość społeczno-kulturową. Oliwa i liście były od dawna stosowane w tradycyjnej medycynie, a współczesne badania naukowe potwierdziły ich skuteczność dzięki bogatej zawartości przeciwutleniaczy. Książka ta, mająca na celu promowanie dzikiej odmiany (oleaster), która według badań archeologicznych i biologii molekularnej jest przodkiem odmiany uprawnej, zawiera zgromadzoną wiedzę na temat tego drzewa, a mianowicie informacje dotyczące tradycyjnego wykorzystania oraz wyników badań naukowych. W drugiej części przedstawiono wyniki naszych badań dotyczących liści zebranych w różnych regionach Kabylia (Algieria). Celem było określenie optymalnych warunków zapewniających większą wydajność. W tym celu ekstrakty polifenolowe uzyskane w różnych warunkach zostały przetestowane pojedynczo lub w połączeniu pod kątem ich działania biologicznego. Stwierdzono znaczną zdolność redukcyjną, a także aktywność przeciwgronkowcową. Podczas badania zdolności do wchodzenia w interakcje z białkami ekstrakt wykazał większe powinowactwo do BSA niż do owalbuminy.
