Para além da sua importância económica, a oliveira reveste-se de um grande valor sociocultural para os povos mediterrânicos. O azeite e as folhas têm sido empiricamente utilizados na medicina tradicional, o que estudos científicos modernos têm comprovado, graças à sua riqueza em antioxidantes. Com o objetivo de valorizar a variedade selvagem (oleastro), que, segundo estudos de arqueologia e biologia molecular, seria o antepassado da variedade cultivada, esta obra reúne os conhecimentos adquiridos sobre esta árvore, nomeadamente a sua utilização tradicional e os trabalhos científicos. A segunda parte consiste numa exposição dos nossos trabalhos centrados nas folhas colhidas em diferentes regiões da Cabilia (Argélia). O objetivo é determinar as condições ótimas que permitam uma melhor rentabilidade. Para tal, os extratos polifenólicos obtidos em diferentes condições foram testados individualmente ou em combinação, a fim de avaliar os seus efeitos biológicos. Foi constatado um considerável poder redutor, bem como atividade antiestafilocócica. Testado quanto à sua capacidade de interagir com proteínas, o extrato demonstrou maior afinidade pela BSA do que pela ovalbumina.
