By analysing the links between the stage of olive ripeness and the physical and chemical properties of the oil obtained, this research aims to optimise olive oil production. The results will enable olive growers to determine the ideal harvest time to meet growing demand for high-quality olive oils.This optimal stage varies depending on many factors, such as variety, climatic conditions and cultivation practices. The 2022/2023 season, marked by extreme weather events in the Mediterranean basin, has highlighted the importance of adapting farming practices to ensure the sustainability of olive production. According to the FAO (2021), the impact of climate change on the quality and quantity of olive production is a growing reality.
