Para corrigir esta situação, os alunos do Departamento de Artes Culinárias da Escola Superior de Administração Hoteleira Welcomgroup, da Universidade de Manipal, embarcaram numa descoberta dos pães indianos nas cozinhas das suas casas e descobriram pães exóticos e comuns a partir das receitas das suas avós, tias e mães. O objetivo deste livro é expor ao resto da Índia e ao mundo inteiro um mundo emocionante de PÃES INDIANOS, desde o Paknam e Tanja do Nordeste até o Siddu de Himachal e Parathas de Delhi e Lucknow, passando pelo Dal Bhaati do Rajastão, Khandvi de Gujarat, Mutli, Adais e Pathiris do Sul. O mundo dos pães indianos certamente irá entusiasmar qualquer verdadeiro entusiasta da gastronomia devido à sua variedade e facilidade de confecção. A palavra final que gostaríamos de deixar do departamento de artes culinárias é que todas estas receitas foram testadas e aprovadas, e esperamos que quem ler este livro se divirta ao prepará-las.
