Per rimettere le cose a posto, gli studenti del Dipartimento di Arti Culinarie della Welcomgroup Graduate School of Hotel Administration dell’Università di Manipal si sono imbarcati alla scoperta dei pani indiani delle loro cucine domestiche e hanno portato alla luce pani esotici e comuni dalle ricette delle loro nonne, zie e madri. Lo scopo di questo libro è quello di far conoscere al resto dell’India e al mondo intero l’entusiasmante mondo dei PANI INDIANI, dai Paknam e Tanja del Nord-Est ai Siddu dell’Himachal e ai Paratha di Delhi e Lucknow, ai Dal Bhaati del Rajasthan, ai Khandvi del Gujarat, ai Mutli, agli Adais e ai Pathiris del Sud. Il mondo dei pani indiani è in grado di entusiasmare ogni vero appassionato di cucina per la varietà e la facilità di preparazione. L’ultima parola che noi del dipartimento di arti culinarie vorremmo dire è che tutte queste ricette sono state provate e testate e speriamo che chi legge si diverta a realizzarle.
