A crescente preocupação com o aumento da obesidade e diabetes no mundo tem levado a indústria alimentícia a fazer modificações nos produtos para reduzir o consumo de açúcares e calorias na dieta. No presente trabalho, foi estudado o efeito da substituição parcial e total da sacarose nas propriedades físico-químicas, sensoriais e nutricionais de cerejas em calda com teor de sólidos solúveis de 55 °Brix, com o objetivo de obter um produto reduzido em açúcares e/ou valor calórico. Foram realizados cinco tratamentos, incluindo a sacarose como tratamento de controlo. Nos restantes tratamentos substituiu-se a sacarose a 50, 80 e 100% por poliálcoois como o maltitol, eritritol, manitol e xarope de mistura Sucrodex®. Foi caracterizada a evolução das variáveis físico-químicas como: pH, densidade, sólidos solúveis (°Brix) dentro e fora da polpa, atividade de água (aw), textura e cor durante o processo de confeção e no produto acabado. Foram efectuados testes sensoriais de aceitação dos produtos obtidos e cálculos nutricionais para verificar a adequação à regulamentação em vigor. Concluiu-se que é viável a elaboração de cerejas em calda com concentração de sólidos solúveis de 55° Brix utilizando poliálcoois.
