Nos últimos anos, a segurança alimentar tornou-se uma questão de preocupação global. A contaminação dos alimentos pode ser física, química ou biológica. Todas elas podem ser eliminadas ou reduzidas a um limite aceitável se forem empregadas boas práticas de fabricação durante o processamento. Este livro analisa os sistemas de produção de chips e farinha de mandioca seca no Uganda, pois esta é uma cultura básica amplamente cultivada e consumida pela população. O manuseamento inadequado durante o processamento pode promover o crescimento de fungos micotoxigénicos, representando um grande risco de cancro.
