Ciò è dovuto al crescente commercio transfrontaliero che consente il trasferimento di alimenti da un’area all’altra, alimenti che non dovrebbero causare alcun danno ai consumatori. Se non gestiti correttamente lungo l’intera catena del valore, gli alimenti potrebbero subire contaminazioni che potrebbero avere effetti negativi sulla salute dei consumatori. La contaminazione degli alimenti può essere di tipo fisico, chimico o biologico. Tutti questi tipi di contaminazione possono essere eliminati o ridotti a un limite accettabile se durante la lavorazione vengono adottate buone pratiche di fabbricazione. Questo libro esamina i sistemi di produzione di chips e farina di manioca essiccata in Uganda, poiché si tratta di un prodotto agricolo di base ampiamente coltivato e consumato dalla popolazione. Una manipolazione inadeguata durante la lavorazione potrebbe favorire la crescita di muffe micotossigene che comportano un grave rischio di cancro.
