La noce del Brasile (Bertholletia excelsa H.B.K) è stata spesso discussa per il suo potenziale biologico per la salute umana. È un seme oleoso caratteristico della regione amazzonica, con pochi incentivi per una produzione e una raccolta eccellenti. Prodotto ancora per lo più a mano, è una fonte di reddito per molti. L’obiettivo di questo lavoro è valutare il residuo chiamato torta dopo il processo tecnologico di estrazione del latte. Utilizzando i metodi dell’Istituto Adolf Lutz (2008) per l’analisi degli alimenti, sono stati ottenuti i dati fisico-chimici in g/100g: umidità 3,2; ceneri 4,2; lipidi 63,4; proteine 13,0; carboidrati 16,2; potere calorifico 687,4 kcal/100g. I risultati mostrano un alto valore proteico e un alto potere calorifico dovuto all’elevato contenuto di lipidi, la maggior parte dei quali è costituita da acido grasso linoleico, un acido grasso importante per l’uomo. Gli studi dimostrano l’elevata presenza di selenio nelle noci del Brasile, che è presente nel totale dei minerali. È un eccellente antiossidante e combattente del cancro, e dovrebbe essere incluso nella dieta. Il dolce può essere utilizzato per realizzare nuovi prodotti alimentari o come integratore.
