Colletrotrichum gloesporiodies é o agente causador da antracnose na goiaba e prolifera durante o período de armazenamento. Uma das principais alterações ocorre na parede celular, afetando a aparência e tornando a fruta mais suscetível ao ataque desse patógeno, o que afeta significativamente a comercialização e o armazenamento. O efeito antifúngico do óleo essencial de canela a 0,01%, associado ou não a 2% de amido de mandioca, foi estudado quanto às propriedades físicas, químicas e enzimáticas, bem como às alterações da parede celular ocorridas na fruta armazenada a 25ºC e 76% ± 5 RH durante 8 dias. Os tratamentos amido de mandioca e amido de mandioca + óleo essencial de canela foram eficazes na manutenção da qualidade da goiaba à temperatura ambiente e em atmosfera modificada, prolongando a vida útil de uma fruta tão perecível.
