Cette revue traite de l’importance de pratiquer une production laitière hygiénique à tous les niveaux de production, mais surtout chez les agriculteurs qui consomment principalement du lait et des produits laitiers dans des conditions d’hygiène médiocres. Il est donc important de sensibiliser les agriculteurs aux risques liés à la consommation de divers produits laitiers. Pour produire des aliments contenant un faible nombre de micro-organismes, il est nécessaire d’analyser non seulement le produit final, mais aussi les équipements de transformation, les emballages et les matières premières. De bonnes pratiques d’hygiène sont très importantes dans la production de lait propre. Les travaux se concentrent sur deux points principaux : la production laitière hygiénique et la mammite chez les vaches laitières.
