This work focused on studying the probiotic properties of strains isolated from Tunisian 'Sebkhat' fermented milks and hypersaline media, in order to select the three strains with the most interesting probiotic effect (antibacterial and antioxidant). By applying the mixing plan procedure and analysis using Minitab software, we obtained the optimum combination of three bacteria for use in the control of pathogenic Vibrio responsible for heavy economic losses in the aquaculture sector. The selected strains B3, L4 and L11 have antibacterial activity against the various pathogens tested. The study of antioxidant activity revealed that the selected strains have a high capacity to scavenge free radicals, which is very interesting. In vivo tests on an axenic culture of Artemia showed that protection against pathogenic Vibrio was improved after the introduction of the selected strains and the optimal combination in the Artemia culture medium.
