Cet ouvrage présente une étude qui vise à utiliser les résidus de pulpe de raisin congelée pour extraire et purifier les anthocyanines, évaluer leur capacité antioxydante et leur stabilité à la lumière et à la chaleur. L’auteur montre des résultats évidents que les résidus agro-industriels de pulpe congelée présentent des propriétés antioxydantes significatives et peuvent être utilisés dans des aliments à pH acide, conditionnés dans des emballages opaques et qui ne sont pas soumis à des traitements thermiques sévères pendant leur transformation.
