Die Vermeidung von Fleischverlusten nach der Ernte in Bezug auf Menge und Qualität führt indirekt zu einer Steigerung der Fleischproduktion. Dies ist nur möglich, wenn die direkt oder indirekt beteiligten Personen über Kenntnisse in den Bereichen Fleischproduktion, Fleischrassen, Verarbeitung, Konservierung, Verpackung und sichere Vermarktung von Fleisch und seinen Produkten bis zum Verbrauchertisch verfügen. Vor diesem Hintergrund wurden sehr ernsthafte Anstrengungen unternommen, dieses Buch zu veröffentlichen.
