Per rifiuto si intende qualsiasi sostanza scartata dopo l’uso primario, o priva di valore, difettosa e di nessuna utilità. Un sottoprodotto, invece, è un prodotto comune di valore economico relativamente minore. I rifiuti alimentari si riferiscono spesso a cibi che non vengono consumati dall’uomo e che vengono scartati o riciclati, come i rifiuti dei piatti (cioè il cibo che è stato servito ma non mangiato), il cibo avariato o le bucce e le scorze considerate non commestibili. Il compostaggio, il riciclaggio e il corretto smaltimento sono metodi efficaci per gestire i rifiuti di cucina. La pratica di questi metodi ci permette di ridurre i rifiuti nelle discariche e di proteggere l’ambiente. Inoltre, il compostaggio dei rifiuti alimentari ci permette di risparmiare denaro e di migliorare la qualità del suolo. Esistono molti nomi alternativi per la gestione dei rifiuti, tra cui smaltimento dei rifiuti, smaltimento dell’immondizia e riciclaggio. La definizione di gestione dei rifiuti è quella di attività che comprendono la raccolta, la distruzione e lo smaltimento dei rifiuti. I materiali di scarto possono essere carta, plastica, vetro, metallo o materia organica. La FAO definisce i rifiuti alimentari come. 'cibo adatto al consumo umano che viene scartato, sia che venga conservato oltre la data di scadenza, sia che venga lasciato deperire'. La gestione dei rifiuti alimentari si riferisce alle fasi di prevenzione, recupero e riutilizzo.
