Però, il sistema di commercializzazione non ha abbastanza strutture di stoccaggio adeguate e quindi si verificano notevoli perdite dopo il raccolto. Gli spinaci sono un prodotto delicato, quindi è difficile conservarli. Gli spinaci sono adatti al consumo umano e sono una pianta fiorita della famiglia delle Amaranthaceae. L’effetto delle radiazioni gamma sul contenuto di umidità degli spinaci ha mostrato che il contenuto di umidità è diminuito dopo il trattamento. Questo potrebbe essere dovuto al rallentamento della senescenza e all’inibizione delle attività metaboliche che causano la diminuzione dell’umidità negli spinaci irradiati. La diminuzione del contenuto di umidità è risultata dipendente dalla dose. È stato osservato che entrambi seguono lo stesso andamento di diminuzione del contenuto di umidità con la diminuzione della dose di radiazioni.
