Les épinards sont une culture fragile, donc difficile à stocker. Les épinards sont des plantes à fleurs de la famille des Amaranthaceae, bonnes pour la consommation humaine. L’effet des rayons gamma sur la teneur en humidité des épinards a montré que celle-ci diminuait après le traitement. Ça pourrait être dû au ralentissement du vieillissement et à l’inhibition des activités métaboliques, qui font que les épinards irradiés perdent de l’humidité. La baisse de la teneur en humidité dépendait de la dose. On a vu que les deux suivaient la même tendance, avec une baisse de la teneur en humidité quand la dose de rayonnement diminuait.
