È indispensabile approfondire il dibattito sull’adeguamento e l’aggiornamento dei contenuti dei libri di testo, con la partecipazione di chi effettivamente utilizza questo materiale, ovvero gli insegnanti. Questi ultimi devono essere preventivamente formati per acquisire tale competenza, in modo da valorizzare l’alimentazione come strategia di promozione della salute. Credo che si debba dare maggiore importanza alla formazione e alla qualificazione degli insegnanti in materia di educazione alimentare e nutrizionale, nonché garantire loro un accesso sempre maggiore a lavori che valutino e presentino criteri per l’analisi dei libri di testo, in modo che gli insegnanti possano scegliere materiali di base che si adattino alle loro esigenze e alle loro procedure di lavoro in classe.
