O objetivo geral do nosso estudo foi avaliar a composição nutricional de alimentos viscosos tradicionais, em particular Corchorus olitorius, Abelmosus esculentus, Sesamum indicum e Triumfetta cordifolia.Os resultados analíticos obtidos indicam que :Os alimentos analisados continham níveis elevados de cinzas, vitamina C e fibras solúveis.O consumo destes alimentos viscosos pelo seu teor em fibras solúveis pode ser encorajado para combater a obstipação e prevenir o cancro do cólon.Graças ao seu elevado teor de vitamina C, estes alimentos viscosos podem ser utilizados como aditivo alimentar antioxidante para prevenir o escorbuto e combater o stress oxidativo.O teor significativo de cinzas destes alimentos viscosos, com uma média de 1,5%, sugere que eles contêm níveis significativos de minerais maiores e menores.
