O azeite é um produto milenar amplamente reconhecido pelos seus efeitos benéficos para a saúde humana. A ingestão diária de compostos fenólicos bioactivos endógenos no azeite virgem é variável devido à influência de múltiplos factores agronómicos e tecnológicos. Uma boa estratégia para garantir uma ingestão óptima de polifenóis através da dieta habitual seria produzir azeite virgem enriquecido com polifenóis bioactivos bem conhecidos. Nos últimos dez anos, tem-se verificado um grande interesse na produção de azeite funcional utilizando diferentes materiais vegetais. A primeira parte do presente documento trata de informações gerais sobre a oliveira e o azeite, a sua composição e os seus benefícios; a segunda parte descreve as diferentes técnicas utilizadas para efetuar o enriquecimento endógeno e exógeno. Estes azeites enriquecidos podem ajudar a prevenir doenças crónicas, têm actividades antioxidantes elevadas e melhor estabilidade oxidativa e podem ter efeitos benéficos na saúde humana.
