O objetivo deste estudo foi avaliar a qualidade microbiológica de um grupo de refeições de rua vendidas em vários restaurantes (Malewa) localizados principalmente ao longo da estrada para Camp Ketele, na comuna de Kabondo em Kisangani, de acordo com as normas da AFNOR. As refeições analisadas consistiam em arroz, feijão e pondu. As amostras foram colhidas em 3 restaurantes diferentes ao longo da estrada para Camp Ketele. Os principais germes testados foram a flora mesófila aeróbia total (TAMF), os coliformes totais (TC), Staphylococcus aureus e Salmonella sp.A qualidade higiénica das amostras de arroz, feijão e papoila foi avaliada com base em critérios microbiológicos.
