Questo libro è la pubblicazione di uno studio basato sul più grande problema di salute pubblica al mondo per i bambini, la malnutrizione cronica. La parte sperimentale comprendeva la dieta a cui sono sottoposti le popolazioni e i bambini delle aree periurbane e suburbane del Mozambico, che si basa essenzialmente su verdure, arachidi, manioca e mais. Da un punto di vista nutrizionale, è noto che questa dieta, pur contenendo alcune proteine, non soddisfa il fabbisogno proteico della popolazione in generale e dei bambini in particolare. Lo studio sottolinea anche la correlazione tra dieta e sviluppo muscolare, poiché è stato dimostrato che questo sviluppo, soprattutto nei bambini, è estremamente influenzato dalla disponibilità e dalla qualità del cibo. È stato scelto il muscolo gastrocnemio (MG) dei ratti wistar (Rattus norvegicus) perché studi precedenti hanno dimostrato che presenta lo stesso tipo di fibre muscolari dell’uomo.
