Le jamun (Syzygium cumini Skeels) est un fruit mineur important issu d’un arbre tropical à feuilles persistantes appartenant à la famille des Myrtacées. Le Syzygium cumini est originaire du Bangladesh, de l’Inde, du Népal, du Pakistan, du Sri Lanka, de la Malaisie, des Philippines et de l’Indonésie. Les fruits mûrissent vers mai ou juin et ressemblent à de grosses baies. Le fruit est oblong, ovoïde ; il est d’abord vert, puis vire au rose avant de prendre une teinte noir-cramoisi brillant à maturité. Il présente une saveur à la fois sucrée, légèrement acidulée et astringente, et a tendance à teindre la langue en violet. La pulpe du fruit, ainsi que les extraits de l’écorce et des graines, sont très bénéfiques pour réduire le taux de glucose dans le sang. La durée de conservation des fruits est très courte (2 à 3 jours), ce qui limite leur utilisation à l’état frais. C’est pourquoi on s’efforce de prolonger leur durée de conservation en recourant à divers traitements post-récolte et en les stockant en chambre froide. Divers changements physiologiques et biochimiques ont été observés pendant le stockage. Les traitements post-récolte ont eu une influence notable sur la qualité et la durée de conservation des fruits de jamun stockés à basse température.
