Mit Hilfe eines qualitativen Ansatzes führte die Studie eine theoretische und reflektierende bibliografische Untersuchung durch, die sich mit dem historischen Kontext der brasilianischen Süßwarenindustrie und der Bedeutung der Erhaltung dieses Erbes durch die Ausbildung von Fachleuten auf dem Markt befasste, die derzeit als eine Lücke in den Studiengängen für Studierende identifiziert wird. Auf dieser Grundlage wurde ein Lehrplan für ein brasilianisches Süßwarenfach mit pädagogischen Begründungen erstellt, die die Wahl der Lehrstrategien unterstützen. Die Schlussfolgerung dieser Arbeit ist eine Reflexion über die Bedeutung des Themas der brasilianischen Süßwaren in der Gastronomieausbildung in Brasilien.
