Le sostanze fitochimiche identificate per la loro potenziale efficacia antimicrobica includono flavonoidi, alcaloidi, tannini, terpenoidi e acidi fenolici. Le sostanze fitochimiche sono in grado di inibire la crescita di una varietà di agenti patogeni come batteri, funghi e virus dannosi, pur non essendo tossiche per l’uomo. Le modalità d’azione delle sostanze fitochimiche nell’inibizione della crescita dei patogeni possono essere diverse: compromissione della membrana cellulare microbica, inibizione degli enzimi, inibizione della sintesi del DNA o delle proteine. Fitochimici come la curcumina (dalla curcuma), la berberina (dalla specie Berberis) e le catechine (dal tè verde) mostrano una potente attività antimicrobica osservata sia in studi in vitro che in vivo.
