L’aloe vera (Aloe barbadensis Miller) est une plante médicinale traditionnelle utilisée dans les industries alimentaire, pharmaceutique et cosmétique. Mais le gel d’aloe vera contient plus de 98 à 99 % d’eau et est donc très périssable. Le séchage est une bonne méthode pour améliorer la conservation, augmenter la durée de vie et maintenir la qualité du gel d’aloe vera. L’art du séchage est pratiqué depuis le début de la civilisation. Il existe plusieurs méthodes de séchage des matériaux. Une étude a donc été menée pour examiner le comportement osmotique et les caractéristiques de séchage du gel d’aloe vera dans un système de séchage convectif et osmo-convectif afin d’obtenir un produit de qualité.
