O objectivo deste estudo era desenvolver um método de extracção de antioxidantes (ácido carnosico e ácido rosmarínico) a partir de duas populações de alecrim (Borj Cedria e Djebel Abderrahmane) utilizando dois métodos: extracção por solvente e extracção por microondas.Os resultados do nosso estudo mostraram que o método de extracção por microondas é mais rentável do que o método de extracção por solvente. Neste último método, o hexano é o melhor solvente para a extracção. A análise quantitativa por HPLC mostrou que a população de Borj Cedria apresenta um melhor rendimento em ácido carnósico em comparação com a população de Djebel Abderrahmane. Esta análise também mostrou que o ácido rosmarínico está presente sob a forma de vestígios apenas nos extractos hexânicos para ambas as populações.
