O consumo de vegetais tem aumentado continuamente devido à mudança no padrão de consumo dos consumidores indianos. Nos últimos anos, várias preocupações têm sido levantadas em relação à eficiência da comercialização de vegetais. A embalagem dos vegetais desempenha um papel importante no cenário atual do retalho, onde a redução do desperdício de alimentos e a boa qualidade são altamente consideradas. Considerando a importância dos detalhes sobre a preferência do consumidor, foram estudados fatores determinantes, disposição a pagar, etc., para cinco vegetais embalados selecionados, a saber: cebola, batata, cenoura, feijão e brócolos. O estudo sobre o comportamento do consumidor em relação à compra de produtos vegetais embalados foi realizado no distrito de Coimbatore, em Tamil Nadu, na Índia. O livro será muito útil para as pessoas envolvidas no processamento, comercialização e pesquisa de vegetais prontos para cozinhar e embalados.
