L’unité d’alimentation et de nutrition (UAN) est une opération qui vise à nourrir des groupes de personnes. Au Brésil, ce segment nourrit plus de 10 millions de personnes par jour, consommant plus de 3 000 tonnes d’aliments par jour et générant des déchets dans le cadre de ce processus de production. La minimisation des déchets à la source est l’une des actions proposées par la production plus propre (P+L) dans la gestion des technologies visant le développement durable des organisations. Ce livre couvre les concepts de P+L dans une UAN, dans le but de minimiser la génération de déchets à la source.
