In der Monographie werden wissenschaftliche Daten über die Herstellung des georgischen alkoholischen Getränks 'Tschatscha' vorgestellt.Es wird gezeigt, dass bei der Verarbeitung weißer Rebsorten nach georgischer Technik (Saftgärung des gesamten oder eines Teils des Mostes, Filtration der gewonnenen Weine und Reifung der Destillate in Eichenfässern) qualitativ hochwertigere Weindestillate erhalten werden als bei der Herstellung von Cognac (Gärung des Traubensaftes, Destillation und Reifung des Destillats in Eichenfässern).Es werden rationelle Technologien für die komplexe und abfallfreie Verarbeitung weißer und roter Rebsorten beraten, die sowohl die Qualität der Weine als auch der Weindestillate deutlich verbessern und eine hohe Rentabilität der Produktion gewährleisten. Es wird auch die komplexe Technologie der Verarbeitung von hybriden Rebsorten untersucht, die eine hohe Qualität der Weindestillate und die Produktion von antioxidativen alkoholfreien Getränken gewährleistet.
