Cette recherche a évalué la production de Pleurotus ostreatus en utilisant des déchets de café comme alternative pour la valorisation agroécologique dans la communauté de Shucush, Amazonas. Trois résidus dérivés du cycle de production du café ont été sélectionnés : la pulpe, la balle et la conque, avec lesquels 16 combinaisons de substrats ont été formulées dans différentes proportions. Le plan expérimental était complètement randomisé et couvrait 48 unités expérimentales. Le rendement et la précocité de P. ostreatus ont été analysés pour chaque formulation. Les résultats ont révélé des différences significatives (p < 0,0001) entre les formulations. La formulation F03 (100% concho) a enregistré le rendement le plus élevé de 19,73% et une précocité modérée de 17 jours. La combinaison F08 (25% pulpe, 75% concho) a montré un équilibre optimal entre le rendement (15,1%) et la précocité (14 jours). La formulation F11 (25 % de pulpe, 50 % d’enveloppe, 25 % de concho) s’est distinguée par sa production rapide, atteignant un rendement de 14,35 % en 15 jours. Il a été observé que les formulations avec des proportions élevées de concho (75-100%) favorisaient la croissance, tandis que des proportions élevées de pulpe et d’enveloppe inhibaient la production.
