Indien ist der weltweit größte Produzent von Obst und Gemüse. Obst und Gemüse sind von Natur aus leicht verderblich. Die meisten Verluste sind auf unzureichende Lager- und Umschlagmöglichkeiten zurückzuführen, was zu Verlusten in Höhe von 35 bis 40 % der Gesamtproduktion führt. Eines der Hauptziele der Obstverarbeitung ist es, verderbliche frische Früchte in haltbarere Produkte umzuwandeln und so die Verluste nach der Ernte zu reduzieren. Die Herstellung von Fruchtpürees ist eine interessante Möglichkeit, solche Verluste zu verringern. Die Verpackung von Lebensmitteln ist einer der wichtigsten Faktoren, um Qualitätsverluste zu verhindern und den Vertrieb und die Vermarktung zu erleichtern. Die Lebensmittelindustrie verbraucht große Mengen an Verpackungsmaterialien und verursacht damit ein Problem mit festen Abfällen. Daher würde bereits eine geringfügige Reduzierung der Verpackungsmaterialien die Umweltbelastung verringern.
