Angesichts der hohen Prävalenz von Mikronährstoff-Mangelernährung bei gefährdeten Bevölkerungsgruppen kann die Nutzung von nicht ausreichend genutzten Lebensmitteln erforscht werden, um die Ernährungsstörungen zu überwinden. In der Praxis gibt es keine Informationen über den Nährwert von unzureichend genutzten Lebensmitteln, die wesentlich zur Nährstoffaufnahme der ländlichen Bevölkerung beitragen könnten. Daher wurde mit diesem Buch mit dem Titel 'Utilization of Underutilized and Unexploited Crops in Development of Value Added Products: A Recipe Guide' versucht, verschiedene unzureichend genutzte Gemüsearten aus ausgewählten Regionen Indiens zu identifizieren und auf ihren Nährstoffgehalt hin zu analysieren. Die Rezepte verschiedener traditioneller indischer Lebensmittel werden ebenfalls als Leitfaden für die Leser angegeben.
