El agave es una de las plantas más nobles que América aportó al mundo. Del tallo maduro (piña) se obtiene el mezcal, bebida de gran aceptación popular, sobre todo entre los habitantes que no disponen de suficientes ingresos para comprar otras bebidas alcohólicas de mayor precio. En la elaboración de la bebida se utilizan tallos jimados (piñas) de agaves silvestres o cultivados, de ocho años o más de edad, de las especies Agave angustifolia, A. esperrima, A. weberi, A. potatorum y A. salmiana. La cosecha intensiva y la depredación de los núcleos de plantas naturales existentes hacen imprescindible impulsar la producción tecnificada del cultivo, para satisfacer la demanda de materia prima existente en los mercados de consumo de mezcal.
