Variations in the storage temperature of frozen meats, especially chicken meat, can lead to serious quality, economic and legal problems. This paper seeks to elucidate some of the impacts caused by this variation in storage temperature, which is so common in this type of product, and the consequences for the functional properties of chicken meat proteins, which have a major impact on their use by the meat processing industry.
