Stevia rebaudiana, eine Pflanze aus der Familie der Korbblütler (Asteraceae), verdient besondere Aufmerksamkeit in der wissenschaftlichen Gemeinschaft aufgrund ihrer doppelten Bedeutung: als natürlicher Süßstoff und als therapeutisches Mittel gegen Diabetes. Diese beiden funktionellen Eigenschaften von Stevia rebaudiana haben das kommerzielle Potenzial dieser Pflanze auf ein höheres Niveau als andere Pflanzensysteme gehoben. Das Buch beschreibt die Biosynthese von Steviosid aus Pyruvat durch den enzymatischen Mechanismus des DXS-Enzyms und endet mit der Bildung von Glykosiden durch Glykosylierung mit Hilfe des Marker-Enzyms Uridindiphosphat-Glykosyltransferasen (UGT). Das Buch eröffnet eine neue Welt des Verständnisses für das strukturelle Verhalten des UGT-Enzyms und seine Bedeutung für die Funktionalität des Gens im Sekundärstoffwechsel der Pflanze.
