Nas últimas décadas ocorreu um aumento crescente por alimentos saudáveis, evitando ingredientes artificiais. Neste contexto, o conceito Clean Label (Rótulo Limpo) surgiu impulsionado pelos consumidores, o mesmo está relacionado a produtos com rotulagem clara, ingredientes naturais, com pouco ou nenhum aditivo artificial. Isso resultou em uma aproximação do produto com a sua matéria-prima, o que contribuiu na compreensão de sua composição. O consumo de alimentos ultraprocessados cresceu no Brasil, principalmente de embutidos, tais como presunto, mortadela, apresuntado entre outros. Esses produtos passam por processos como salga ou cozimento e contêm aditivos para prolongar a vida útil e controlar a multiplicação microbiana. Alguns dos aditivos, que são utilizados em produtos cárneos podem ter efeitos adversos, levando à formação de substâncias prejudiciais à saúde. Estes possuem potencial carcinogênico, principalmente quando consumidos repetidas vezes. Desta maneira, torna-se importante identificar quais substituições nos aditivos poderiam ser realizadas, para que a composição do alimento se mantenha próxima à composição da sua matéria-prima através do Clean Label.
