Au cours des dernières décennies, on a assisté à un engouement croissant pour les aliments sains, sans ingrédients artificiels. Dans ce contexte, le concept de Clean Label (étiquette propre) a vu le jour sous l’impulsion des consommateurs ; il désigne des produits dont l’étiquetage est clair, contenant des ingrédients naturels et peu ou pas d’additifs artificiels. Cela a permis de rapprocher le produit de sa matière première, ce qui a contribué à une meilleure compréhension de sa composition. La consommation d’aliments ultra-transformés a augmenté au Brésil, notamment celle des charcuteries, telles que le jambon, la mortadelle, l’apresuntado, entre autres. Ces produits subissent des traitements tels que le salage ou la cuisson et contiennent des additifs destinés à prolonger leur durée de conservation et à limiter la prolifération microbienne. Certains additifs utilisés dans les produits à base de viande peuvent avoir des effets néfastes, entraînant la formation de substances nocives pour la santé. Ces substances présentent un potentiel cancérigène, notamment en cas de consommation répétée. Il est donc important d’identifier les substituts possibles à ces additifs, afin que la composition de l’aliment reste proche de celle de sa matière première grâce au Clean Label .
