Comme alternative au développement des communautés rurales d’agriculteurs familiaux, on a observé l’émergence de diverses entreprises agroalimentaires, dont l’objectif principal est d’ajouter de la valeur aux matières premières provenant des champs grâce à la transformation. Cependant, en raison de l’absence de politiques publiques efficaces, d’assistance technique et du faible niveau d’instruction des agriculteurs en matière de techniques de transformation appropriées et de conditions minimales correctes pour la production alimentaire, il apparaît que ces unités de fabrication ne respectent pas les normes d’hygiène et de santé établies par la législation brésilienne et proposent des produits de mauvaise qualité microbiologique, représentant ainsi un risque pour la santé des consommateurs. Cet ouvrage présente donc une étude de cas dans une unité de production familiale à Abaetetuba, dans l’État du Pará, montrant comment un programme de bonnes pratiques de fabrication peut être développé et mis en œuvre dans des entreprises économiques solidaires, favorisant le développement rural et l’amélioration de la qualité du produit final.
