A nossa investigação inscreve-se no âmbito do desenvolvimento da bebida alcoólica 'musururu' produzida localmente na cidade de Goma. É por isso que foram efectuadas análises físico-químicas e microbiológicas desta bebida, a fim de a melhorar do ponto de vista tecnológico, microbiológico e sanitário. O inquérito semi-estruturado permitiu-nos identificar três tecnologias diferentes de produção de 'musururu' na cidade de Goma. Foram identificados os pontos críticos em cada operação unitária na produção desta bebida. A produção de 'musururu' difere dos processos modernos na medida em que a operação de fabrico da cerveja é mais complexa e a fermentação alcoólica pelo fermento tradicional é rápida e breve, com uma fermentação láctica natural sobreposta.Observou-se uma melhor estabilidade dos parâmetros físico-químicos para as amostras obtidas com a adição de sacarose e de levedura S. cerevisiae, depois estabilizadas por pasteurização.
