Les jus de fruits connaissent aujourd’hui une consommation généralisée à l’échelle mondiale, portée par les bienfaits qu’on leur attribue pour la santé. En raison de leur demande en constante augmentation et de leur forte valeur marchande, ils constituent l’une des cibles les plus fréquentes de la falsification. Comme il est prouvé que les aliments falsifiés ont des effets néfastes sur la santé, plusieurs approches ont été mises en œuvre pour détecter la falsification des jus de fruits afin de garantir leur qualité et leur sécurité. En fonction de la nécessité ou non de détruire l’échantillon, les techniques analytiques permettant d’évaluer l’authenticité des aliments peuvent être classées en deux grandes catégories : les techniques destructives et les techniques non destructives. Ce travail offre un aperçu du principe de la détection de l’adultération, de son application et de ses performances, ainsi que des avantages et des limites des différentes techniques analytiques. Les approches destructives, telles que les méthodes physico-chimiques, l’analyse isotopique, l’analyse élémentaire, les techniques chromatographiques et les techniques basées sur l’ADN, sont passées en revue. En outre, les approches non destructives, notamment les techniques spectroscopiques, la spectroscopie par résonance magnétique nucléaire, les techniques électroniques et les techniques d’imagerie, sont abordées.
