Ziel dieser Studie war die Bewertung des antioxidativen Potenzials und der Fähigkeit, freie Radikale zu fangen, von vier verschiedenen Nahrungspflanzen, nämlich Cinnamomum zeylanicum, Brassica campestris, Mentha spicata und Phaseolus vulgaris. Für die Untersuchung wurden sowohl die methanolischen Rohextrakte als auch verschiedene Fraktionen und Ölfraktionen der Pflanzen herangezogen. Die qualitative Untersuchung der phytochemischen Bestandteile wurde nach verschiedenen in der Literatur vorgeschlagenen Protokollen durchgeführt, und schließlich wurde die HPLC-Technik angewandt, um die verschiedenen in den Nahrungspflanzen vorhandenen organischen Verbindungen zu ermitteln.
