Lo zenzero mango è il nome comune della Curcuma amada Roxb. È un’erba aromatica perenne e rizomatosa della famiglia delle Zingiberaceae. Questa famiglia contiene 70-80 specie di erbe annuali o perenni rizomatose (Kaliyadasa e Samarasinghe, 2019). Il genere è originario della regione indo-malese e oggi si trova in tutti i tropici dell’Asia, oltre che in Africa e Australia (Sasikumar, 2005). È una pianta triploide monocotiledone funzionalmente sterile (2n = 3 = 63). I rizomi sono l’unica fonte di materiale da piantare in questa coltura, poiché non vengono prodotti semi derivati dal sesso. Lo pseudofusto è alto e robusto, con foglie oblunghe-ellittiche che si restringono alla base con foglie lunghe, oblunghe, lanceolate, radicali, inguainate, picciolate e a ciuffo. Ogni pianta presenta da 5 a 6 coppie di foglie. L’altezza della pianta può raggiungere 1 m, con 8-10 foglie, una spiga apicale (la lunghezza varia da 10 a 18 cm) di fiori giallo pallido e tuberi radicali iniziali prodotti all’estremità di radici fibrose. L’attività antiossidante di un estratto acquoso di metanolo di foglie e rizomi di C. amada è stata determinata utilizzando il metodo di sbiancamento del carotene (Sutar et al. 2020). L’estratto di foglie ha superato quello di rizomi in termini di attività.
